Given that you’ve got the RAM, (which to my understanding is a primary bottleneck on such things) maybe worth running a dedicated server on one of your machines? You can still run the client o the same machine and the other one of you can potentially connect with fewer problems (plus you get the benefit of not having to deal with the co-op tether).
