…can never see whereabouts the Varangian is about to respawn. Anyone got some screenshots that could help please?

If your graphic settings are high enough you’ll see a disturbance in the water in one of three spots a few seconds before he pops up.

The water ripples that indicate the Varangian’s next location are not part really of any specific mechanic. It’s just a consequence of how the water behaves, and can be difficult to spot. Water quality settings as a whole are adjusted through the Effects detail settings. Some may find it easier to spot it at, say, Effects detail 3.8 as opposed to Effects detail 4, or vice versa. I’ve taken screenshots of it at both settings for you. Keep in mind that the ripple actively pulses, so its visibility varies by default.
