I bought the big bundle on xbox.
Do I need to reinstall to see the latest update or do I have to buy it separately?

If you are referring to the complete edition 2021, that will include all current DLC and also the Siptah expansion. You will not need to purchase any more.
If you only bought Year one, or year two DLC bundle that unfortunately doesn’t include the Siptah expansion.
All non-cosmetic updates are provided free of charge, with the exception of the Siptah expansion.
So even if you only buy the base game, you will have access to the most up to date version of the game.
