Technically “Salted” food is for preserving, not flavor. So its not a “served meal” More of a on Road one.

Compared to Cooking haunch on its own and enjoying it as it is. I would assume since one is more trail food and other a cook piece of meat. The latar gets to be High grade.
The regen rate is improved on the Honey Jerky compared to the Roasted Haunch. The sated effect also lasts longer. I get putrid meat out of old Roasted Haunches, and that doesn’t happen with Honey Jerky.

I agree with @Dzonatas, this seems like an oversight. The “mid grade” vs “high grade” designation is there to help players determine which item is better in terms of in-game usefulness, weigh one item against another in its class.
Honey jerky heals more, expires more slowly, costs more in terms of materials, and has a higher level requirement to craft (campfires are unlocked at level 3, stoves at level 29). Its in-game usefulness is superior to roasted haunch in every sense.
