Like some other Boss Monsters, they are invisible.

I see this happening in online play on isle of Siptah map as well.
As recently as 3 days ago the 1 or 3 skull rhino on south beach of ‘Dawn Island’ (looks like a crab island, south of main island) is often invisible, also 1 skull birdies (forget their names) are often invisible.
it is an extra level of terror to game for sure, especially if you have forgotten that beasties live there.
