What type of server are you playing on ? pvp/pvec/pve?
Do you play on a server or solo / coop? .
it is possible that the decrease of the enslaved njs is activated and that following a long absence, the njs simply died of starvation, if I do not say anything stupid the timer is 15 days (to be checked)

Starvation has not been a problem before and all my buildings are there
Did you send you a report to the Funcom help service ?
The decrease of NPCs has nothing to do with that of the buildings, the counters are separated.
Are the NPCs posted to the craft tables still?
There are three possibilities (those I know)
1- Famine
2- The NPCs fallen through the mech
3- The NPC limit was reached and the server increased the NPCs in surplus
