Can not crack open any of the meteors. I have used all explosions at my disposal and nothing.

Since you mention this is happening in a private server, do you have any mods enabled?
Yes, we have the following:

Less Building Placement Restrictions
Hosav’s Custome UI Mod
Stacksize Plus
Embelight3.1.3
Pickup+
Side question - is that the order your mods appear in your mod list?
I don’t know how it could be affecting the actual issue, but I believe it’s quite important for LBPR to be below various mods in the mod list (in this case specifically Emberlight) - check out the LBPR page of the workshop on steam, there’s a section that goes into what order mods need to go to play nice together and that it could cause some issues if they are in a different order.
I run Pippi - Stacksize+ - LBPR (in this order) and meteors crack open fine. Try the mod order suggested by @DanQuixote.
Have not found a server we could not crackem in yet.
