Just a quickie, do the decay and demolish timers run concurrently or consecutively?

They’re one and the same. There’s only one timer, usually known as the decay timer.

I was poking my nose around in the server interface and I have one setting for Decay and the one underneath it is for auto demolish.

Still confused…

Ah, in server settings - sorry, I misunderstood. Decay timer goes first, when that runs out buildings enter a ‘demolishable’ state that runs for the length of the second timer. At the end of that, they will auto-destruct.

Decay timer is usually 7 days. Typically, after the decay timer elapses, the timer counts a last 24 hours at which the structure can be demoed.
