This is very similar to the problem Official servers were dealing with where a previously logged out player character would appear. They also had the default character model with white hair but had 200HP and it wouldn’t say “fighter”. FC had to treat the servers to get rid if them - assuming they used a script. If players tried to kill them on PVP or PVE-C, it would crash the server. On all including PVE, if you drew a purge or enemies and they would attack, it would also crash the server.
You say its a new server but have you had players on that stopped playing and their bodies were removed from the world?
Have you tried removing all mods (plus in folders) and see if he still spawns? Or remove the mods 1 by 1 or in batches to determine if it is a mod(s) causing this?
You probably have some mod that contain some old files saved that are now outdated so the game gives you broken results as it expects something else. It will most likely be something not updated for a few years now.
Probably easier if you either post your full modlist / log (the full log contains the modlist too) or just simply troubleshoot it.
You don’t have to try every mod one by one, there are quick troubleshooting methods to deal with exactly this, like the 50/50 method. Remember to do these in single player mode with the database copied whenever the issue can be reproduced there as it’s much easier.
Also, never work with your live database, make a backup and restore it after you’re done troubleshooting (for example if you remove a building mod temporarily, buildings using that will collapse and similar unintended things might affect your save)

How to troubleshoot your mods
make a backup copy of, and then open your ConanSandbox\Mods\modlist.txt in notepad
select about half of the lines and cut + paste into an empty notepad then save the modlist.txt but leave open
load the game
if it’s still broken, then close it and cut half the modlist again and paste into the temporary notepad window
if it’s no longer broken all the mods on your list are fine, so just temporarily wipe them from your modlist (you have a backup) and place back only half of what you previously removed and test again with those.
repeat that until you narrowed it down to just one mod, it only takes a couple of tries since you’re halving the list every time
restore your backup copy of the modlist.txt and remove that one mod / notify the mod author etc.

Hi Snu! Unfortunately I don’t have any experience with Pippi, I wish I could help but alas.
It’s been years since I’ve had a private server of my own and I didn’t use mods. The private servers I’ve visited since, if they did have Pippi, I wouldn’t have seen the admin view of course as simply a player.
As you know @Xevyr posted a detailed troubleshooting comment for you, I hope it was helpful as its thorough.
If you want to go that route, then post a full server log, selectively listing a few doesn’t mean it’s done by those, especially since you yourself have said that the issue doesn’t always happen and it’s just incidental - could’ve been something that was happening before and you didn’t notice, or simply one of the mods you used back then got broken by a more recent game update etc.
While I can’t be certain as you have several large mods that alter the game in major ways, but if I had to guess based on that, I would say it’s either Ancient Armory or Ancient Architecture.
Both of those mods seem to touch vanilla crafter thralls in some ways, the armory one might be more likely as that one hasn’t been updated for a year.
