So.. thanks @cyc for your help.
The crashes seem to be a win11/nvidia problem.
I tried a few things and reinstalling an old graphics driver seems do do the trick.
For anyone else having problems, try cleaning your driver using.
then search your specs and install the oldest one of these you can find and go from there.
Beware, installing mods causes the game to be pretty unstable again.
