I bought the Seekers of the Dawn Pack, trained a Greater Hyena and got some Yamatai Fodder but cant create the Skin Version one. The game say i have no Greater Hyena in my inventory but i have it for sure.
To craft a variant of a Pet using Pictish, Yamatai or Turanian food, you must mus have both the pet and the food in your inventory and then you craft it from the crafting menu. That means you must do it before positioning the pet to guard, because once it’s done you can’t get the pet back in your inventory.

Of course i can set them as guard and pick them up again. But maybe this is an option from an addon. Now i wanted to create new hyena but the puppies dont grow in the armored pen… They have feral flesh as food.
The fact that you can pick up a pet and return it to inventory is a result of a mod and not available in the vanilla game. I doubt they can be recolored since that is a part of the base, Funcom, code.
I don’t understand what you mean when you say ‘puppies dont grow’. They grow fine in my online, no-mod server and no-mod solo. If this is a post-patch problem, I suspect your mod author has not had time to refine his code to accommodate the changes.
Have you tried growing hyenas in solo without mods?
