Can’t get up from barkeep. Pushing ‘c’ doesn’t cancel the seating animation. I can ‘left click’ and ‘right click’ and sometimes I “fly” off the ground in a sitting animation.

That works unless you talk to the barkeep. After that you lose the ability to disengage from the bar.
Yeah, this is happening to me as well. I got stuck at the bar, couldn’t leave, used (I think) jump to get up and now I am stuck in a semi t-pose and get an error that “you can’t emote in your current state”.
Editing to add that I have had 4 NPCs show up to my tavern. There is only one I can interact with (the chair around the side of the bar nearest the keg). None of the others at the bar, or the tables could be spoken with. I deleted the bar, replaced it, reset the barkeep and waited longer. More NPCs arrived, that same spot is the only spot where I can interact with a sitting thrall to hire them.
