Since the age of war update I’m not able to harvest star metal nodes. The bug occurs on official pvp servers for me, Siptah and Exiled lands. I’m able to shoot the node with an explosive arrow and I can smash the node till it’s destroyed but I don’t get any star metal in my inventory.
I guess it’s been a while since you’ve tried, huh? You need to use a T4 pick (Hardened Steel or better) in order to harvest Star Metal.

iirc normal steel also works?
So basically just not stone and iron picks 
Normal steel is not T4, is does NOT work.

Tried that but did not work.
It’s my bad, DaVice is right on this one, Hardened Steel is the minimum needed
