If I log into the new server after the transfer what will happen? I don’t want to screw up and make an entirely new character and be stuck with that when I have a lvl 60 on the server that will be merged.
The old server won’t show in the server selection list.

so what happens if I click continue as if I am going to log into the old server?
I don’t remember the steps I used. It worked.
I’d say back out of that screen until you spawn… not respawn… in the desert on the transfer-to server.
