Well this way you will be lucky to have it in Greece only in old traditional Cafes.


It is called hovoli, it is a burning sand pan with that creates the best taste for this Cafe.
We, at home just use the simple fire with gas, but you have to minimize the fire of the camp gaz to take the best result. In order to create more kaimaki (foam), you just have to lift the device once the coffee is starting to rize, wait some seconds away from fire, put it back and when it is going to rize again remove it from fire, it’s ready.
For a small cup you need 1 spoon (full) coffee and the same amount of water you want to have in your little cup.
For big cup at least 2 spoons and ofcurce the water equal to the cup.
If you put sugar inside you have to put it on the beginning and mix with spoon only in the beginning.

Huzzah! It’s possibly a new abomination thread where we can now debate the best coffee for both brewing and serving.

I tip my bonnet to JJDancer for an excellent choice in coffee. Best Irish Coffee I had was in Ireland of course. Heaven is an appropriate description.

I refuse to engage in any debate regarding ‘brand’. Coffee is the highest and holiest sacrament and, therefore, defies the titles of mere mortals. It is the Elixir of Life.

When we lived in Los Angeles the head of our Construction Division occasionally invited us over for dinner, but one time just me for coffee. He was Lebanese, his wife was Greek, and when I arrived in their kitchen entrance it was not he at the stove but she. She sized me up, looked down at the dark goo in her pan, looked back at me, raised her eyebrow and cast out icily: “You are late more minutes than it took for me to grind this.”
