It is called hovoli, it is a burning sand pan with that creates the best taste for this Cafe.
We, at home just use the simple fire with gas, but you have to minimize the fire of the camp gaz to take the best result. In order to create more kaimaki (foam), you just have to lift the device once the coffee is starting to rize, wait some seconds away from fire, put it back and when it is going to rize again remove it from fire, it’s ready.
For a small cup you need 1 spoon (full) coffee and the same amount of water you want to have in your little cup.
For big cup at least 2 spoons and ofcurce the water equal to the cup.
If you put sugar inside you have to put it on the beginning and mix with spoon only in the beginning.
