I want to see my workers in the workshops and not in a bed somewhere.

You can easily disable the beds and most other objects for Thrall use (You can do this using the Radial Menu)
if you can play singplayer you can disable the settlement system or else the server owner have to disable it on the server, but in general yearh they should have made it account wide to people their dont want to use it
