Will the game be updated to take advantage of the hardware of the new consoles or will it just run like PS4 Pro/Xbox One X?

Porting to next-gen consoles is currently not planned. It is possible they will reconsider this after the Isle of Siptah DLC full launch.
PS5 will probably have backwards compatibility with Conan Exiles.
