Bug Description: Bonuses from food and potions disappears. They still show in the UI but with health at least the bonus is clearly gone. With anything other than health and stamina I don’t know how to tell if the others are in effect or not.
Bug Reproduction:
I’m not quite sure when this happens, but I suspect it’s after either transporting via map and transporter stone or transitioning into a dungeon. I’ve been noticing this for awhile and I always end up noticing it while I’m in a dungeon.
I think what you are actually talking about here is the health/stamina bug.
If you acquire a buff that increases your max health/stamina, then eat/drink to full, which grants you a +5% bonus to max health/stamina, it will overwrite your previous buff.
When the timer on your buff runs out, you will lose the bonus that you already lost, and your health/stamina will go negative.
Because of this, it is generally recommended that you avoid +health/stamina buffs. Only buffs are bugged, bonuses from gear are not.
This is a very old bug (1,2,3,4,5) that has probably always been in the game, but went unnoticed by most players prior to the 3.0 update due to the fact that bonus health/stamina buffs were exceptionally rare before then, with most buffs being +attributes instead.
Oh, well, that definitely sounds like something that needs to be fixed. It sounds like a bug that needs to be prioritized if it’s been around for so long.

To complement on Tephra’s reply, have you attempted to uninstall and completely remove the mods that you are using, to make sure that the issue does not occur?
So wait - if you don’t eat to full then the buff remains?
So for example if I was at 10% full and ate a Savoury Jerky, which is +60 health and Hunger Sated 71, and it didn’t fill my hunger bar then the buff would stay?
And I could also drink a +60 health Elixer and that would stay, all until I ate enough to completely fill my hunger bar and get the “sated” buff??
Tested it on official, so no mods. And yeah this seems to be caused by eating food while at full health with an active bonus. Given the necessity of eating from time to time to prevent starvation this is a problem.
