Having never played a Final Fantasy game, my mind goes somewhere else when discussing bird mounts:

I would like to see more mounts at all. But I think camel makes sense and could work even without any or without big changes in gamemachanics compared to horses.
Elefants could work the same way. Something else it would be if sabertooth tigers are rideable. That would be like a normal follower. But I don’t think that a saberthoot would accept anything on his back so that’s maybe not the right way for the Conan universe. It’s more heman 
Never read the books. Would this be OK with the lore?

People pretty much just rode the same animals as they did in real history as far as I recall, at least in the original Howard stories (which as a pedantic aside were not books plural, the only actual novel length story was The Hour of the Dragon and everything else were short stories and novellas), I haven’t read much of the post-Howard stuff.
The mount options got a bit weirder in Age of Conan, but that can be chalked up to having to play by MMO rules. I do recall someone at Funcom saying they wanted to keep any future mount options in CE grounded and not go all crazy on a stream or something, but that was also a while ago so who knows if that’s still the policy.
I know of chocobos through cultural osmosis, they’re just not my go-to for big flightless birds one can ride in fiction.
I’m guessing those particular horses have been around the camels alot, historically when armies with horses that have never encountered camels came into contact the horses would become frightened and harder to control, I believe it is the smell that throws them off.
As long as we’re talking about mounts, how about rideable Shalebacks? They’d make a good early-game mount.
