GAMEPLAY:
SHOW CONTEXTUAL CONTROLS
SHOW LAND OWNER NOTIFICATIONS

CONTROLS:
AIM MODE RIGHT STICK SENSITIVITY

Steps on how to reproduce issue:

  1. Set above settings.
  2. Quit game.
  3. Start game.
  4. Settings not saved.

I second the issue with
AIM MODE RIGHT STICK SENSITIVITY

Single player local and on a co op game the issue persists.
Tried to save the setting on a Original XBOX1 and XBOX 1X.
