If you wait a few seconds until the corpse completely stops moving, it won’t move very much when you strike it with a tool and you won’t have to chase it. (I’ve had flying rhinos, mammoths, etc in the past as well.)
I got this information from @Leeux and it works.
But… but… flying Rhinos are fun! 
If you’re careful you can attempt to send the Rhino flying in the direction of that hated NPC enemy while he is unawares
