You decided to play on a server that allowed for this. That was on you.
Those servers have been like that for 4 years. Its how people there like to play. Its never been about online PVP. But setting up puzzles for each other to solve every evening you logoff.
Now I agree that isn’t PVP. But that’s the play those people like.
If you want PVP then you should play on a server that doesn’t allow offline raiding. There is quite a few of them. On these servers you will see the sieges and battles you are looking for. Where literally armies meet in battle and have it out with explosions and mayhem going everywhere.

This was a screenshot taken after a major battle. It was about 19 vs 23 or something like that. It was basically over half the server’s online population in the one area fighting. One group had attacked one the day before, then they decided to attack back, but the first group called on all their buddies, and the other group called on allies. It escalated fast. Let’s be honest, when a fight goes down, everyone wants to join in!
It lasted about 3 hours. Hundreds of explosives were used, trebs were used, orbs were used. And even Archery was used (this was during the time of crap archery, but the server was running my mod to fix it at the time).
Finally it culminated with a draw. A cease fire and a truce. The defenders gave back stuff they stole the day before, everyone got all their equipment returned that was looted during the fight. All so people could log out (it was getting late) without just losing their base (RL came first, imagine that!). And about half of us decided to stick around, get some screenshots, and then go meet somewhere for a feast and drinking.
That is a good PVP experience. No sneaking around when your opponent is offline. No hard feelings. No grudges. Just beat the crap out of each other and then have fun and merriment later.
If you’re looking for that experience, then officials should be the last place you should be dwelling on.
